Restaurant Fotografiska works on a zero-waste basis. We use inventive ways in cooking – we don't waste ingredients or create waste. Everything from the flower to the root or from the nose to the tail can be used – both in the kitchen and bar. The little amount that's left over is used in compost, which makes its way back to the fields and garden boxes.
The soul of our food is Peeter Pihel, a sustainable restaurant advocate, who has had a versatile career (Pädaste, Fäviken Magasinet, Fulgurance), and who has shaped the flavours of modern Estonia. Kristjan Kiho is responsible for the seasonal and unique wine list.
