    Das Restaurant Fotografiska arbeitet nach dem Zero-Waste-Prinzip. Beim Kochen wenden wir erfinderische Wege an, wir verschwenden keine Rohstoffe und erzeugen keinen Abfall. Von der Blüte bis zur Wurzel oder von der Nase bis zum Schwanz findet alles Verwendung - sowohl in der Küche als auch in der Bar. Das wenige, was übrig bleibt, wird jedoch über Nacht zu Kompost, der zurück auf die Felder und Beete gelangt. Die Seele unseres Essens ist Peeter Pihel, Verfechter eines nachhaltigen Restaurants, Gestalter des modernen estnischen Geschmacks mit einer vielseitigen Karriere (Pädaste, Fäviken Magasinet, Fulgurance).       Interesting exhibitions, but 17€ for a ticket is too much. OK the inclusivity, but this is not the Louvre.
